Garlic Herb Butter Salmon with Roasted Vegetables and Quinoa

Ingredients:

  • 4 salmon fillets

  • 4 tbsp unsalted butter, melted

  • 3 cloves garlic, minced

  • 1 tbsp fresh parsley, chopped

  • 1 tsp fresh thyme leaves

  • 1 lemon (juice and zest)

  • Salt and pepper to taste

  • 2 cups baby carrots

  • 1 red bell pepper, chopped

  • 1 zucchini, sliced

  • 1 cup quinoa

  • 2 cups vegetable broth or water

  • Olive oil for drizzling

Instructions:

  1. Prep the Salmon: Preheat the oven to 400Β°F (200Β°C). In a small bowl, mix the melted butter, minced garlic, parsley, thyme, lemon juice, and zest. Season the salmon fillets with salt and pepper, then brush the garlic herb butter over each piece of salmon.

  2. Roast the Vegetables: On a baking sheet, toss baby carrots, bell peppers, and zucchini with olive oil, salt, and pepper. Roast in the oven for 15-20 minutes or until tender and slightly caramelized.

  3. Cook the Quinoa: While the veggies are roasting, cook quinoa. Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine quinoa and vegetable broth or water. Bring to a boil, then reduce the heat and simmer for 15 minutes or until the quinoa absorbs all the liquid.

  4. Cook the Salmon: Place the buttered salmon fillets on a lined baking sheet and bake for 12-15 minutes or until the salmon is opaque and flakes easily with a fork.

  5. Assemble: Serve the baked salmon over a bed of quinoa and roasted vegetables for a complete, nutritious meal.
